RECIPE: NATILLA
For something sweet, natilla is a traditional homemade custard to die for. It is usually served at Christmas time, but there’s no reason not to enjoy this dessert year-round!
Recipe – Serves 6
Ingredients
1L milk
5 egg yolks
100g sugar
Lemon peel
1 cinnamon stick
40g cornstarch
Method
Reserve a small glass of cold milk and heat the rest with the cinnamon stick and the lemon peel. When the milk starts to boil, lower the heat so it doesn't spill and let it boil for five minutes over a very low heat.
Meanwhile, add the cornstarch to the remaining cold milk and stir until it dissolves completely.
Place the egg yolks in a large bowl and add the sugar and milk with cornstarch. Beat well with an electric mixer.
After having boiled the milk for five minutes, pass it through a strainer.
With the electric mixer running, pour the milk into the yolk preparation little by little, continuing to beat, until you have added all of it. Foam will appear on the surface.
Pour the mixture into a saucepan over low heat. Stir constantly. When the foam on the surface disappears and the custard thickens (approximately 10 mins), remove the saucepan from the heat.
Pour the custard into glasses and sprinkle with cinnamon.
Store refrigerated for up to a week.
