RECIPE: Dulce de Leche

YIELD: 1 1/4 to 1 1/2 cups | ACTIVE TIME: 11 to 14hs | TOTAL TIME:  11 to 14 hs 

Background of dulce de leche 

Ingredients

●      4 cups milk

●      1 1/4 cups sugar

●      1/4 teaspoon baking soda

●      1 teaspoon vanilla

Directions

1.      Stir together 4 cups milk, 1 1/4 cups sugar, and 1/4 teaspoon baking soda in a 3- to 4-quart heavy saucepan. 

2.      Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until caramelized and thickened, about 11/2 to 13/4 hours. Important: After about an hour, stir more often as milk caramelizes, to avoid burning.

3.     Stir in 1 teaspoon vanilla. 

4.     Transfer to a bowl to cool.
